Vegan Banana Bread


1 1/2 cups all purpose/whole wheat flour
2 tspn baking powder
1 tspn baking soda
2 tspn egg replacer
1/2 cup sugar
3 tbsn oil
4 tbsn water
1 tbsn orange (or other) juice concentrate
1 tspn vanilla
1 cup mashed banana

Mix dry ingredients together. Mix in remaining ingredients and stir for a couple of minutes. Pour into lightly greased loaf pan. Bake 40 minutes at 350 degrees. Add berries, nuts for added variety.
