Sarah's delicious chili:


1 medium onion, chopped
2 medium carrots, chopped
1 tbsp olive oil
3 1/2 cups cooked or canned kidney beans
1 28oz can of diced tomatoes (3.5 cups)
6 oz tomato paste
2 1/2 cups cooked or canned chickpeas
8 - 12 mushrooms, chopped
1 12oz can of corn
1/4 cup of rice
1-3 tbsp chili powder
1 tbsp pepper
2 tbsp curry paste
2 cups of vegetable stock or water


In a large pot, saute the onions and carrots in oil on medium-high heat until the onion become translucent. Add the remain ingredients and stir together. Simmer on medium-low heat for 40-60 minutes, stirring occasionally. Serve with fresh bread. Note: you could also add any other veggies you have kicking around; peppers or zucchini work well. Makes 6-8 servings.
